Cupping Notes

This blended lot turned out quite well. It helps that we were drawing from a fairly small pool of producers, who are practically neighbors to one another. The dry grounds have a base sweetness of raw honey with a nice scent of toasted almond in the foreground. At Full City, there's a sweet basil scent too, along with dark caramel. Adding hot water creates quite a rich aroma, honey drizzled apple, Demerara sugar, and even a bit of chocolate cookie. You can develop quite a bit of sweetness with this coffee, and it shows very well in the City+ and Full City range. Acidity is moderate, yet defined (like green apple), and remains intact all the way up to Full City. City+ roasts show notes of apple and mulling spices as the cup cools, sitting atop convincing flavors of dark sugar and honey. Full City roasts bring out some dark fruit notes, as well as a nice rich chocolate flavor that holds on in the finish. Body is medium, and darker roasts will make a nice, chocolatey SO espresso.

Roast Recommendations

City+ to Full City+; this does well at a wide range of roasts, even shows well lighter than our recommendation, I just feel that balance is found at a minimum of City+.
